When we think about aged tea, we often think about Hong-Kong, Taïwan... and forget to notice Malaysia where there is a long culture of aged tea drinking!
Happy to be back in the charm of Malaysia!

Pressing tea cakes

It is more popular to press tea cakes in spring, as soon as possible in order to sell them as soon as possible, but autumn is in fact a very good time to press spring tea cakes. It allow a light post-fermentation of the maocha during the spring, and a good drying of the tea cakes during the winter!

Il est plus populaire de presser les galettes de puerh au printemps, le plus rapidement possible, de manière à pouvoir les vendre le plus vite possible. Mais l'automne est en fait un très bon moment pour presser le thé du printemps. Cela permet une légère post-fermentation du maocha durant d'été, et un bon séchage des galettes durant l’hiver!
